Citrus Quinoa Salad

The days are getting longer and while we can almost see the light at the end of the tunnel.. let’s face it, it’s still February and it can be a tough month. Snow/freezing rain storms are still a thing and it seems at this point in the season, we are in a bit of a deficit; deeply craving sunshine, fresh fruits and vegetables.
Not everyone can hop on a plane, but we can always make a trip to the local grocer for a big bag of citrus (in season!). There’s nothing like a blast of fresh Vitamin C to boost immunity, lift spirits and take us out of the throes of winter!
This recipe is truly a favourite of ours, especially this time of year. Bursting with colour, flavour, vitamins/minerals and sheer vibrancy – you’re gonna love it!
Ingredients
Ingredients:
- 2 cups spinach or mixed greens
- 1/2 cup quinoa
- 1 large grapefruit (preferably ruby red)
- 2 medium oranges
- 2 large avocados, chopped into chunks
- 1/2 cup finely chopped red onion
- 1/2 cup freshly chopped cilantro
- 1/4 cup lime juice (about 2 limes)
- 1/2 tsp sea salt to taste

The Steps to Take
Step 1
Place spinach or greens in large salad bowl.
Step 2
Cook 1/2 cup quinoa in medium pot. Add 1 cup + 1/4 cup water. Bring to boil. Remove from heat. Once cooked, spoon out cooked quinoa onto a plate or cookie sheet to cool. Once fully cool, add to greens.
Step 3
To prepare citrus, peel the skin from the grapefruit and orange. Then, slice across the centrelines and cut into segments.
Step 4
In a medium serving bowl, combine citrus wedges, avocado chunks, red onion, cilantro, lime juice and salt. Gently toss to combine.
Step 5
Add mixture to greens and quinoa.
Step 6
Gently toss together and serve immediately. Enjoy the beautiful bursts of flavours and textures!
