This Gluten-Free, Dairy-Free Peanut Butter Cookie recipe is a go-to favourite in our kitchen and it’s so simple to make. Even better, chances are you probably already have most of the things you need to make them in your pantry.

Ingredients

  • 1 large egg
  • 3/4 cup sugar
  • 1 tsp baking soda
  • 1 cup creamy (or chunky, if that’s your preference) peanut butter
  • 1/2 teaspoon GF pure vanilla extract

The Steps to Take

Step 1

Preheat your oven to 350°F and line a cookie/baking sheet with parchment paper.

Step 2

​In a large bowl, mix together your large egg, sugar, baking soda, peanut butter, and vanilla until everything is well incorporated and smooth.

Step 3

Take a large spoonful of your batter and roll it into balls by hand, placing them a fair distance apart on your baking sheet. Press down lightly on each ball of dough with a fork (you can dip your fork in water to help stop it from sticking to the dough).

Step 4

Place then into the over and bake for about 12-14 mins, until they’re ever so slightly golden brown. Remove from the oven and transfer them over to a cooling rack and let rest. From there, all that’s left to do is enjoy!
