This Gluten-Free, Dairy-Free Peanut Butter Cookie recipe is a go-to favourite in our kitchen and it’s so simple to make. Even better, chances are you probably already have most of the things you need to make them in your pantry.
1 large egg
3/4 cup sugar
1 tsp baking soda
1 cup creamy (or chunky, if that’s your preference) peanut butter
1/2 teaspoon GF pure vanilla extract
The Steps to Take
Preheat your oven to 350°F and line a cookie/baking sheet with parchment paper.
In a large bowl, mix together your large egg, sugar, baking soda, peanut butter, and vanilla until everything is well incorporated and smooth.
Take a large spoonful of your batter and roll it into balls by hand, placing them a fair distance apart on your baking sheet. Press down lightly on each ball of dough with a fork (you can dip your fork in water to help stop it from sticking to the dough).
Place then into the over and bake for about 12-14 mins, until they’re ever so slightly golden brown. Remove from the oven and transfer them over to a cooling rack and let rest. From there, all that’s left to do is enjoy!
