Gluten-Free Banana Bread (with Icing Sugar Glaze)

Banana bread is such a wonderful comfort food. One bite and you’re immediately whisked away to fond memories. There is something uniquely satisfying about a really good piece of banana bread. Maybe the fact that it can be eaten at any time of day adds to it’s appeal. We certainly make it a lot. This recipe has been a few years in the making, lots of tinkering and trying out different ingredients… we promise it’s a good one! Always reliable, super moist and oh so flavourful. Side note: omit the egg and get a really good vegan loaf out of it, too!

Ingredients

Ingredients (for Banana Bread):
  • 1.5 tbsp chia seeds
  • 2 tbsp water
  • 1 egg
  • 3/4 cup sugar
  • 2 tsp vanilla extract
  • 4-5 very ripe medium bananas
  • 1 cup brown rice flour
  • 1/2 cup sorghum flour
  • 1/2 cup cornstarch
  • 1/4 cup tapioca flour
  • 1 tsp xanthum gum
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda

Ingredients (for icing sugar glaze):

  • 1.5 cups sifted icing sugar
  • 3-4 tbsp milk or water
  • 2 tsp vanilla (optional)

Optional ingredients: Decorative flowers to give the final product a pop of colour, perfect to represent the blooming gardens and undeniable beauty of the Spring season!Ā 

The Steps to Take

Step 1

Preheat your oven to 350F and lightly grease a standard size loaf pan with canola or coconut oil.

Step 2

In a small bowl, mix together chia seeds with water and let stand for 5 minutes until gelled.

Step 3

In another bowl, combine all dry ingredients.

Step 4

In your stand mixing bowl, combine bananas, vanilla, egg and chia. Small lumps are just fine.

Step 5

Pour dry ingredients into wet and mix for minute, stopping to scrape side of bowl. Do not oversized but ensure all ingredients are thoroughly combined.

Step 6

Pour batter into prepared loaf pan. Bake for 60 minutes or so, until a toothpick inserted in the centre comes out clean.

Step 7

Let stand 10 minutes before removing from the pan. Transfer to a wire rack and cool. Keeps in an airtight container for 3-4 days!

Optional steps: Top with icing sugar glaze, as it adds to the overall presentation and is super simple to whip up. Put sifted icing sugar in a mixing bowl, add liquid of your choice (milk, water) a little bit at a time and voila… showtime. Just pour glaze over cooled cake and let it set!
