Looking for a breakfast/brunch idea using our gluten-free bread? In the spirit of keeping things simple, quick and delicious; try out this delightfully delicious Gourmet Gluten-Free French Toast recipe. It’s moist, flavourful and a smash hit with all ages!

Ingredients

Ingredients:

  • 1/2 loaf of Schoolhouse Cinnamon Raisin bread (sub for our Potato Millet or Molasses Seed bread if you prefer – any of our loaves will work)
  • 1 egg
  • 1/2 cup milk
  • 1/2 tsp ground cinnamon
  • Juice of half an orange (other half to garnish the plate!)
  • Butter for frying
  • Maple Syrup or Honey to drizzle on top
  • Optional: Shredded coconut and fresh fruit to add on top. You could use: peaches, blackberries and figs (as shown in the photos), or other fruits like: raspberries, strawberries, blueberries – it’s totally up to you!

  • Parchment paper
  • Baking sheet
  • Spatula

The Steps to Take

Step 1

Whisk egg in a medium-sized flat dish (pie plate works great). Whisk in milk, cinnamon and fresh orange juice.

Step 2

Heat non-stock skillet on medium-to-high heat. Add a bit of butter to melt.

Step 3

Flip a piece of our bread 2-3 times in mixture to really soak up the flavour. We used our Cinnamon Raisin Bread for this recipe. If you prefer, our Potato Millet or Molasses Seed Bread will work just fine, as well.

Step 4

As butter begins to sizzle, add your pre-soaked bread to the pan.

Step 5

Cook 1-2 mins on each side, keeping an eye on heat and adjust accordingly.

 

Step 6

Serve up on a plate, and top with anything that your heart desires! In the photo, you’ll see this version is topped with fresh peaches, blackberries, and fig, maple syrup, and shredded coconut. You could also use honey if you prefer – just have fun with it, be creative, and dress it up however you like!
