Food photographer and recipe developer, Kelly Neil, created an extra-special recipe for us just in time for the holidays! These Gluten-Free Peanut Butter Brownie Slices are simply irresistible, and use our GF Brownie Bites as the base! You’ll want to make this one over and over again, folks. Seriously… they’re THAT good!

Ingredients

Ingredients:

  • 1 package Schoolhouse Gluten-Free Gourmet Brownie Bites (8 brownies)
  • 1 block (250g) cream cheese, room temperature
  • 3/4 cup icing sugar, sifted
  • 1 cup peanut butter
  • 1 cup whipped cream
  • Melted chocolate for drizzling

The Steps to Take

Step 1

Line a square 8×8-inch baking pan with parchment paper.

Step 2

Crumble 8 Schoolhouse Gluten-Free Gourmet Brownie Bites by hand. Spread crumbled brownie bits evenly inside baking tin and press in firmly to make the crust.

Step 3

Beat cream cheese and icing sugar in the bowl of a stand mixer. Mix in peanut butter. Gently fold in whipped cream.

Step 4

Dollop peanut butter filling onto prepared brownie crust and spread evenly with an offset spatula. Refrigerate a minimum of 3 hours.

Step 5

Garnish with melted chocolate or anything else you like. Serve chilled and cut into slices.
