Start your day off right with this delicious open-face veggie power omelette and carry that momentum forward to win the day!
Packed with protein, fibre and the right balance of carbs and fats; this will keep you going until mid or late morning. It is our go-to breakfast every day as it packs a punch and is quick to make (with limitless variations to keep it interesting!)
- 3 whole free-range eggs
- 1/2 cup black beans
- 1 cup chopped kale
- 1 garlic clove, finely chopped
- 1/2 fresh avocado
- Butter or avocado oil for cooking
- Sea salt and black pepper to taste
- Splash of veg or chicken stock
The Steps to Take
Heat your choice of butter or avocado oil in a non-stick skillet and add garlic, frying on med-high heat for about a minute until crispy, golden brown.
Add chopped kale, combine with garlic. Add a splash of stock and cover for 30 seconds, for kale to absorb stock and cook.
Turn heat to low. Toss in black beans. Pour egg mixture on top. Cover and let eggs set for about 3 minutes.
Remove lid and sprinkle with feta. You can also add cherry tomatoes here too! Cover with lid for another minute or so.
Turn off heat and transfer to a plate. Top with a sprinkle of sea salt/black pepper and garnish with avocado.
