This light-as-air lemon cake is seriously delicious—which is all the more remarkable when you consider that it contains neither gluten nor dairy, yet it’s moist, springy, and topped with a light, whipped lemon-mousse icing.

Icing:  icing sugar, lemons, earth balance butter (palm oil, olive oil, sunflower lecithin, lactic acid – non dairy, annatto extract), lemon oil, lemon colouring
