This light-as-air lemon cake is seriously delicious—which is all the more remarkable when you consider that it contains neither gluten nor dairy, yet it’s moist, springy, and topped with a light, whipped lemon-mousse icing.

Ingredients: potato starch, organic cane sugar, canola oil, almond milk (tree nuts), eggs, baking powder, xanthum gum, vanilla, baking soda and sea salt.
Icing:  icing sugar, lemons, earth balance butter (palm oil, olive oil, sunflower lecithin, lactic acid – NON DAIRY), annatto extract.

Allergy Alert:  This product was cooked in a facility that uses tree nuts.

    I’m normally a chocolate dessert fan, but all of these cakes are delicious! They are so moist and yummy! And the frosting is great too!
