HOLY MOLY your carrot cake is the best gluten-free cake I’ve ever tasted! My mother (back home in Mississauga, ON) surprised me by ordering this cake for my 20th birthday, then my boyfriend picked it up at the farmer’s market on Saturday. This cake is absolutely incredible. Thank you so much for not only making my mom extremely pleased that she could still provide me with a birthday cake (even when she’s all the way in Ontario) BUT ALSO thanks for baking this masterpiece of gluten-free heaven. LOVE IT!
