Thai Banana Fritters with Sweetened Condensed Milk

After enjoying a mouth-watering Massaman Curry or the perfect plate of Pad See-Ew, the best way to finish any authentic Thai meal is with these crispy, fluffy banana fritters topped with a gorgeous drizzle of sweetened condensed milk! This dessert is quick and easy to prepare, best made right after dinner so you can serve them hot and fresh. These are staggeringly delicious and highly impressive—we hope you love them as much as we do!

Ingredients

  • 1 1/2 cups of white rice or brown rice flour
  • 3/4 cup sugar 
  • 1 1/2 cups grated coconut
  • 1/2 cup to 3/4 cup water (may need to adjust depending on season. Start with 1/2 cup and add until you get a thick batter)
  • 1/2 tsp salt
  • 1/4 tsp xanthum gum
  • 1 1/2 tbsp sesame seeds
  • Oil for frying and a plate with paper towel

The Steps to Take

Step 1

In a heavy bottomed skillet, heat an inch of oil on med-high heat for a few minutes until hot.  Check temperature of oil to see if it is ready by putting a small piece of GF bread in oil.  Use a slotted spoon to remove from oil as well as for fritters.

Step 2

Mix dry ingredients in a bowl and slowly add water to make a thick batter.

Step 3

Cut bananas in lengthwise wedges so when dipped in batter and cooked, the bananas caramelize inside fritter.

Step 4

Cook 1-2 min each side, using a metal spatula or slotted spoon to flip.

Step 5

Be VERY careful with the hot oil!

Step 6

Drain on paper towel and serve on a plate with sweetened condensed milk drizzled on top.
